I like to use simple, subtle, and flavorful ingredients to enhance the natural flavors of seafood. With an abundance of species to work with that are all delivered daily from local purveyors, I find the greatest pleasure in being able to create my own interpretations of dishes, often using fresh wild Alaskan fish, local day boat caught fish and Hawaii’s freshest fish.
I use fresh, seasonal local seafood and produce whenever possible. My greatest joy when I am not in my fast-paced, high volume kitchen is visiting local farmers’ markets to see what is at the season’s best.
